Beforehand you can soak your cashews anywhere from 30 minutes to 3 hours for extra creamy soup, but this is not essential. If your sun-dried tomatoes are not in oil pre-soaking is essential to realease the flavour.

Add all ingredients to the blender, with salt and pepper to taste. Blend for 30 seconds or until creamy and then pour into your bowl.
