According to the American Dietetics Association a vegetarian diet is one that does not include meat,

which also includes fowl or seafood or products containing those foods.

A vegetarian diet does include

fruits, vegetables, bean, legumes, cereal grains, nuts and seeds, with or without dairy products and eggs.

In addition to that basic definition there are other forms of a vegetarian diet.
