I wanna say something about a noodle shop that’s owned by an old classmate of mine, whose name is Lee. He and I, we go way back. We were classmates in middle school, and have been in contact all these years. So I was one of the first ones to know when he started this business.
His shop is located in my neighbourhood. It’s quite a small one, with a capacity of no more than 20 guests. This noodle shop specialises in beef noodles. I’ve been a regular there, not because of our history, but because his noodles are really good. I mean, his place has got near perfect reviews on the largest restaurant review website, and when I am there, I’ve seen people of all walks of life, like students and low incomers, white collars, as well as rich guys driving Mercedes and BMWs.
As for the reason, well, for starters, I’ve got to say, he’s really lucky because he’s got his family’s secret recipes that are transmitted from generation to generation. They got his business up and running.
Besides, he knows all about his ingredients, and insists on using the genuine stuff. I mean, in this day and age, a lot of restaurant owners, including large food chains tend to choose ingredients with inferior quality, because of their cost concerns. For example, they use artificial powders to make beef flavour, instead of using beef bones to stew beef soup. Well, consumers are not stupid, right, we can tell the difference. So the way he upholds his principles makes his business thrive.
