Traditional Greek Souvlaki is what is cooking in my kitchen today.

I'm going to show you how to make tender pieces of pork meat grilled on a wooden skewer to perfection.

Serve wrapped in a crispy pitta bread along with juicy tomatoes,

onions and tasty, spicy Greek Tzatziki Sauce.

It smells delicious and it's a full meal,

In a container, I am going to add 5 tablespoons of white wine.

Two sprigs of rosemary. Some sprigs of thyme.

and this is the best marinade for your wooden skewers.

Soak them in this for one to two hours

and they will release a wonderful aroma when grilling and also they won't burn.
木签子就会在烧烤的时候释放出非常赞的香味,而且不会烤焦
Now for the meat, I have two pork tender loins that are 800g in total
现在来处理一下肉,我这里有一共800g的猪里脊
You will notice the white membrane covering the top part of your pork loin.
大家可以已经注意到这个里脊上面有一层白色的膜
I'm going to use my sharp knife to remove it because no matter how long you cook it,
我要用我锋利的菜刀把它去掉,因为不管你怎么烤
it will always be tough.

Now I can cut my meat into equal sized pieces.
现在把肉切成差不多大小的小片
about 2-3cm thick, careful guys don't cut your fingers.

Put them in a large bowl and set them aside.

Peel one medium onion, Quarter it and separate the onion layers and in to the bowl.

and now it's time for the marinade.

This is my Greek and secret marinade and vinegar is the key ingredient.
这是我的独家秘方,醋则是关键的成分
It will not only help tenderise the meat, but it will also give Souvlaki it's characteristic flavour.
醋不仅可以让肉变得更嫩,羊肉串标志性的香味也来源于醋
Olive oil, 5 tablespoons, white wine vinegar, 5 tablespoons.
橄榄油5勺,白葡萄酒醋5勺
2 cloves of garlic, 3 sprigs of rosemary, some sprigs of thyme
两瓣蒜,3枝迷迭香,再来几枝百里香
use only the leaves for both, on the top.
迷迭香和百里香都只要叶子,铺在上面
a pinch of salt, a pinch of pepper and that's it!
一撮盐,一撮胡椒粉,搞定
You will notice that the corner of the meat changed in to white, this is because of the vinegar.
大家可能已经注意到了,肉的边沿已经变白了,这是因为我们加了醋在里面
Don't think you have done something wrong, everything is fine!
不要以为你哪里做错了,一切顺利
Guys, at this point set aside for at least 20 minutes, let the marinade work on the meat.
朋友们,这个时候就要把肉放旁边腌一会儿,至少20分钟,让肉充分吸收佐料
Now I will use my hands and get all dirty.
现在我要把手弄脏脏啦
I will bring my skewers here, lets put the pieces of meat on to the skewers.
把签子拿过来,肉串到签子上
A piece of meat, then a piece of onion. Another piece of meat.
一片肉一片洋葱,再来一片肉
You can also add tomatoes, peppers, mushrooms, pineapples. Whatever vegetables you like.
你也可以串土豆、辣椒、蘑菇、菠萝,想串什么就串什么
Ready to grill!
可以烧烤啦
Leave them until they are cooked through and caramalised, about 5 minutes or so.
放到烤架上,让它慢慢熟,慢慢变成焦糖色,大约需要5分钟
I will throw the marinade on the top.
把汁儿也淋上去
And I'm going to bring back pitta bread!
现在我要去拿皮塔饼啦
Throw your pitta bread over the Souvlaki on the grill and toast them,
把饼放在羊肉串上面,烘一烘
and let them soak up all the lovely smoking, grilled flavours.

The meat and the pitta bread are ready.
肉和皮塔饼都好啦
The meat is cooked perfectly, caramalised, it's tender and juicy.

I have sliced two tomatoes, I have Tztaziki Sauce here.

So, hand, greaseproof paper, pitta bread, Souvlaki.
